With how Blizzard is setting up quests, it is pretty hard to avoid gathering quests without leaving yourself high and dry without quests to do. I know that you can get through Outland and possibly Northrend without doing gathering quests, but for the rest you may have to just tough them out.

I prefer to do all of that stuff in game rather than rely on the software to do it for me. I personally use a focus based setup to achieve my goals. My macros look something like:

You will need to set whichever toon you are leading with as your focus for this to work.

You will have to set a key bind in game to set Interact with Target. Then you'll need to make sure you have that key in your keymap. If you enable click to move, your characters will run to the target you use the interact function with. As far as lining up your windows, you can also set keybinds in game for camera angles.
