I would say you can do anything you want. Don't let others poop on your parade. What people will say, "You can't do heroics, so why even try", "They are fun as hell, but why do it if you can't do heroics", "You won't even have to attack much other than tagging a mob since the pets (BM) will kill things for you, but don't do it since you can't do heroics".

My thoughts is I wanted to try to do same classes as my stretch more than 1 tank, 1 healer and 3 DPS. My thinking said, if you are going to put in a healer, might as well put in a tank since a tank can be a better tank than a pet. If you are going to put in a tank and a healer, why not put in a different DPS for one of the hunters since hunters don't really have buffs (pre-4.0.1). If you are going to put in a different DPS, why not put in a 2nd DPS that does more than hunters. You go from a hunter heavy group to only 1 hunter and have changed a challenge to just doing ordinary groups.

I will say, I have a priest and 4 locks and my healer gets ganged up on 98% of the time. They are all dressed alike (since all cloth), but they really look for a healer and gang up on it. Doesn't matter if in lead or not. So I would pick a healer that can tank 3-5 people while the pets and DPS kill the people. For me and my playstyle that would be a druid. It is pretty hard to kill a resto druid (even in caster form, which they will be 99% of the time now). Also, it lets you go kitty and hide for first 8 secs of the fight then you can pop out and through huge heals on whoever has aggro.

I personally went with 5 hunters, BM and Draenei (GotN-Gift of the Naaru). With freezing traps, intimidate, disengage, etc you are pretty much okay except for rogues and whirlwind warriors. But everyone pretty much hates those. I throw my pets 55-70 yards and let them chew on the people while they try to get to me. If they stop and attack my pets, I just get 45 yards away and mend pet and run away again. Good luck getting down 5 BM pets with good PVP gear on the hunters without needing a good healer.

I looked at what actually helped (buffs) and survivabiity. Hunters get buffs now, so fort is actually out since silithids can do it. Spirit buff is out since hunters don't use mana. So other than bubble, what does a priest bring? Druid has MotW (not sure if a pet can do it now), can't do thorns anymore (long CD and only 1 person), can stealth to hide to no get singled out, can dash away to let hunters get range on players and time for pets to attack. Shammy is okay, has nice buffs, but now they are replaceable by pets (str/agi is cat, hero/blood is core hound, %crit is devilsaur and wolf). Pally is good, since if you get focused, you can bubble and still heal, Kings isn't bad, might isn't super since we don't use mana, so only get 1 benefit from it, judge of insight (the light one) is cute and fun for pets, but doesn't help hunters since it is melee only (I think).

My simple thought is don't let others influence you, do what you want cause you are going to have to play with the team for hours on end.
