There is a difference in long term farm teams and short term farm teams.
When Shadowlands launches, herbs will be in major demand since they are needed to make inscription items used in legendary item creation and are used by all armor types.
The armor specific (ore, leather, cloth) items will be in demand but lesser so because not all classes use the same armor type. In that sense, leather would probably be 2nd best to have since there are more leather users then anything else but leather is also more annoying to come by unless we can find a farm spot like we did in BFA.
If herbs is the route you go, druids are king. You could do with the herbalism mount, but it is bulky and annoying to use in my opinion. Also guardian prevents dazing so you got that going for you, allowing to get water walking to prevent your druids shifting to aquatic form whenever you reach a pool.
Long term farming is still too early to tell. Generally both druid and hunters are good picks if you can farm at one specific spot, druid because of their insane aoe potential with the high dps output and range on starfall and hunters because... well they are hunters.
Also keep in mind that you no longer share 1 loot pool (free for all is gone). Every character has to loot the corpse so your entire team needs a way to loot, not just one. So if you want to profession split between your team, hunters are the only choice left because of fetch being really strong and druids needing engineering for looterang to work.
