    No. You only need two if you want to run your SSD as part of a raid volume. You can run RAID X on your other drives and just partition the SSD as its own drive.

    I remember trying to add a non raid hard drive for data and it wouldn't show up. I was told since my two drives are running raid 0 I wouldn't be able to add a non raid drive to it. I have vista 64. If I buy one SSD and add it as a non raid drive wouldn't I have the same problem?

    You cannot add a non-raid drive to a raid _partition_ (aka "set") to increase the size on-the-fly but you can most definitely add a non-RAID drive to the same system with other RAID drives. It will just show up as a separate drive letter once you get it set up.
