Most gathering quests i Just skip but there are some where the drop rate is really high around 90% and you only need a few of them then in my opinion it is worth doing.
I do em if I need em.
If I am a bit low on exp, which I find happens often in outlands, or if they lead to a large chain. Or if I just need to level skinning and LWing and might as well get some exp out of it!
My 4 yo brother used to do some for me while I sat beside him reading or whatnot, but getting your own small child who likes to kill velociraptors is not recommended, they are rather slow after all, and have difficulty turning.
When it comes down to it, if I need to, or am in the mood, I do them. Most of the time, I don't.
Pre-outlands
If the reward is worth it, yes. Otherwise no.
Outlands
Do all quests.
Like Kaynin, I expext my stance will change in Outlands. In order to get the epic flyer (times 5, argghh) money together, the best way I can see to do it, is do every last quest, ensuring that I have at least 2 full zones of quests to do AFTER I've already hit 70, so that the quest XP turns into gold.
There's also rep involved too.
It would be cool if we could put together a list of the collection quests that are worth doing (either because drop rate is good or because they're part of a desireable quest line), and a list of collection quests that should be avoided.
There is a great addon to help sort out those gathering quest that are just one or two quests or are part of a very long chain that makes them worth doing. Get "Lightheaded" and to plus it up, use the addon called quest helper.
Lightheaded will show all the future quests in the chain and thier loot.............. makes sorting out what to complete or to dump.
I think that some of the quests you will encounter are really tutorials for end-game type material. I try to do all the quests I can, for in the end, I'll learn something new that will eventually pay off when I reach 70. Also, when you get to the end-game chains (68-70), you will already have built up the patience. Such as the Shadowmoon Valley chain, the gear you achieve is pretty decent for something that you will have been used to. Collection quests such as the termites in the Plaguelands and the Cones in Terokkar are very annoying to me, but sometimes Ill be in the mood to do them. Its almost as if you don't think about it. So my final advice is do whatever you're in the mood for; afterall, this is your leisure time ;P.
