I have been levelling x5 Prot Pallas and have been facerolling dungeons with zero issues - however after this mornings downtime I log in and queue for dungeons and my poor pallys seem to be taking a shit ton of damage dying left right and centre! Am I going crazy.. is it my imagination?!!

its normal, blizz dont care about burst damage in lower dungeons. Imagine how hard it is if dont have any heirloom gear :D
next thing is the scaling system. 2-3 lvl diffence between your toons and mobs packs are nearly enough to oneshot you or you them

I began boxing in the bc expac years ago so I know how hard it used to be :)

I presume you've tried re-equipping all your gear? Did your stats change? I seem to recall occasions where items were changed that caused stats to screw up unless you got nekkid and then put everything back on.
