I was watching a video of a mage aoe grinding and it hit me, I totally over looked the fact that mages can easily pull 4-5 adds at a time, and aoe them down. Would multi-boxing 3 mages be incredible aoe ownage? If so I would love to roll 3 mages and do more instance/aoe grinding over quests since I'm having trouble with all my quests being gather And also, whats the best horde and alliance mage race?
Need to worry about taking damage and healing. I'd prefer to going with the easier AoE/prot-spec paladin & 2x AoE mages. Paladin will hold aggro easily once you get consecrate, plus you get BoW buff for your mages. When I was dual-boxing, the Paladin/Mage was my favorite combo for this reason, and two mages would have just been that much faster.
For race, I'd go with undead on Horde, or gnome(+int)/human(+spirit) on Alliance. I hate playing gnomes, but I can see how they could be easier to play due to their small size not interfering with mouse-overs. Tauren are a pain in the ass in this respect.

For paladin races, obviously blood elf is your only choice on Horde, but I'd go human(+spirit, +mace/sword expertise) over dwarf(stoneskin) on alliance.
