I'm going all out on professions once I hit 60, get my epic land mounts and go run around Azeroth levelling the gathering up. Except for the mains Enchanting, none of these are levelled yet:

    Shaman1: Tailoring / Enchanting
    Shaman2: Skinning / Leatherworking
    Shaman3: Herbalism / Alchemy
    Shaman4: Mining / Jewelcrafting
    Shaman5: Engineering / Blacksmithing

If I live long enough to see a single coppers worth of profit out of this arrangement, I'll be much surprised.
...for when one toon just isn't enough...

I had real luck with my BElf priest and 4xwarlocks. The priest is an enchanter and a tailor. One Lock is herb/alch. Another is mining/JCing. The third is skinning/LWing. Most of the time, the LWer just sends greens over to the enchanter, but it works out for leveling EVERYTHING that I feel like putting any effort into. For example, the enchanter is level 24 and already has almost 200 enchanting skill. I've bought / sold NOTHING on the AH.

Although, I'm thinking about selling all the shards this group gets from instance DEs just because it will be NUTS for cash early on.

I went for a streamlined money making one without any out-of-the-way gathering professions.

    S1 - Skinning / Tailoring
    S2 - Enchanting / Tailoring
    S3 - Leatherworking / Tailoring
    S4 - Tailoring / Empty

If you are boosting its np to keep all the tailoring pretty high up there if you stall at certain instances for mageweave and any other cloth you ran short of. With this setup I will have 4x mooncloth specs which will supplement income. Past that Enchanting is 100% must have. Skinning and leatherworking I figure was nice / easy since my main just skins anything I kill. All in all pretty convenient choices and pretty good cash flow selling all the enchanting mats that were generated.

I would LOVE to have S4 to have jewelcrafting but it would be a moneysink. I think I might just blow the 2-3k or less (hopefully?) to get 300+.

Alchemy has a really nice trinket + transmuting meta's is good cash, and enchanting is handy for the ring enchants and DE'ing

I'd much rather have alchemy x4 but it would be thousands of gold worth of mats to get that high.

If you have 4 alch transmute masters and a jc.... GOOOLLLLLDDD. You can buy mats off the AH daily, transmute diamonds and cut meta gems that sell for 200g each. If all 4 guys proc transmute thats 8x200g

Alch is so easy to level. Its a no brainer.

Hmm... I went the don't worry about professions till later method.

I do recommend that you have 2 professions somewhere on your team while leveling.

Enchanting - So you can DE all the drops from the instances you'll run
Herbalism - So you can spot all the herbs for herb collection quests

Aside from that.. it's up to you.

    I run a pally x 4shaman team.

    Currently I have
    Pally - Mining/Enchanting
    Shaman 1- Herbalism
    Shaman 2-4... none

I'm thinking I'll eventually go with
    Shaman 1 - Herb/LW
    Shaman 2 - Alchy/LW
    Shaman 3 - Jewel/LW
    Shaman 4 - Skinning/LW
    Pally - Mining/Enchanting

I just like leatherworking for gear (Netherstrike/Drums of panic)
    All luck.. No skill.
    Finges - Fingez - Phinges - Phingez

My toons just hit 66 yesterday, and I finally sat down and got my final profession (jewelcrafting) up to TBC level.

    I now have:

    Pally - Enchanter / Herbalist
Priest - Mooncloth Tailor / Skinner
    Mage1 - Alchemy / Spellfire Tailor
    Mage2 - Mining / Spellfire Tailor
    Mage3 - Jewelcrafting / Spellfire tailor

Basically I had planned on leveling all the tailors plus enchanting while I went along, but early on that came to a halt due to the horde-side wool problem. I ended up with all mages stuck on wool, priest high level tailor when I hit outlands (and of course enchanting leveled) but at least I had stacks of silk, mageweave and runecloth in the banks.

As soon as I got epic land mounts (about level 63 I think) it was back to azeroth and a few long hours picking flowers, skinning everything in sight, and mining. If you pick the zones right this can actually go faster than you'd expect. Jewelcrafting is a bitch though, I expect it would take the mats from leveling 2 or 3 miners to level a JC :S
