I didn't initially think about the shared shadow benefits so that is a good point to ponder.
To me, unless played in a highly mobile kite-ing style, Mages benefit the most from shield+fort which is why I wanted to pair them.
I view pet classes as mini-trinities unto themselves since they have a Tank Pet, pet healing (mend/funnel), and DPS from pet/character. In the end you will have at least one pair without a healer in it and pet classes are the ones that least benefit from a true healer.
With the above in mind I think the pairs having a healer (and the pet classes healing their pets) plus the Mage getting Fort+Shield will likely net you more overall across all the duos than trying to pair warlock+Priest for shadow damage synergy.
In the end there is no wrong answer and if doing the duos you want to do makes it more likely you will be excited about logging in and finishing then that ultimately is the right answer (I can see some fun from deep shadow warlock and deep shadow priest DoTing mobs to death). In my case I like Warlocks and chose to go with them for my DPS even though the general consensus is that they are less optimal than going with Mages so even if that isn't the generally recommended approach it was the right one for me...
