IMO, two boxing is fine, but any more and you should go up to 5. You will probably get bit by the multiboxing bug and want 3 more accounts anyway

I'd always want a healer in a dual boxing setup, or at least a class that can heal/res. Priest pairs well with a mage or lock, and a shadow priest can help a warlock pretty well.
