I started my boxing career with 1xpriest and 4xlocks. At 36 I switched out two of the locks for a warrior and a mage. So my final team turned out to be Warrior (main), 2xlocks, priest, mage.
I switched out two of the locks on the advice I got here in the forums regarding a "real tank" in outland instances. I now wish I had kept all the locks. A real tank is probably good advice if you plan on doing a lot of instances... but it's just not my play style. I don't enjoy instances that much. I may do them once if at all... unless I am roped into it from guildies.
Consider your own play style before making any decisions. Do you plan on doing a lot of instances? If so you probably will need a real tank..but who's to say you can't bring a long a friend to tank for you and just leave one of the locks behind?
Personally the priest adds too many benefits to be left out of the group... but again.. that's just my opinion. But Fortitude goes along way as far as I am concerned.
Fit YOUR team to YOUR play style is the best suggestion I can make.
I made the choice to drop two of the locks... it was MY fault for doing it... I did NOT consider my play style when I made that choice.
