only in classic wow, not on retail. Retail collection quests are very boxer friendly now, i think any mob that drops a quest item for one character will also give one to every party member so it's just as good as soloing.
The only quests i would skip on retail are the quests that remove you from group and force you to solo in a different phase, but sometimes those quests tend to be necessary and you have to do them for each character.

I just did a quest where I had to collect 60X5 creeper eggs off bears. I had to do it for each character.
oh yikes, is that the gross southshore quest? If it's the same one or similar to the one im thinking of you have to click the eggs to get them and not from a corpse. I think you get around 3-7 per bear. I think you can even just cc the bears and get the eggs. I think i remember being able to IWT the eggs on my slaves, but im not sure. Not the most boxer friendly, but it's much much better than it used to be and luckily those types of quests are few and far between.
Yes, I skip them unless they lead to a really good quest chain. You can make up the lost quest XP pretty easily by running an instance an extra time or three. I prefer quests vs instance grind but even classic doesn't need to be done to 100% completion just to level. There are benefits (rep, etc.) but they usually aren't worth the time, for me at least.
[edit] My comment applies to both classic and retail, though with retail's much lower XP requirements per level, it takes even less quest coverage.

search the quest there, and it will also tell you the next/previous quests in the chain and the rewards.
I skip almost all collection quests unless it is a gatekeeper for an important followup. There are a few but not many Cleansing Felwood is the only one I can think of off the top of my head.
