It may be the other way around... There are things a single mage that multiboxing mages generally can't do as well. If you watch Jokerd's Mage run to cap he used lots of movement and Blizzard type AoE to slow/kill mobs before they got to him... Movement like that and targeting on the go with follow groups can be harder for boxers and worst case the 2nd mage should only help a little.
The biggest thing if you watch Mage-Cleave videos by a group of people (not a single person boxing) is that mages often keep moving their AoE zone back and that is harder to do by a single person. For boxers on the other hand there is usually some kind of tank to either stop the mobs on the tank in the AoE zone or drag the mobs though the AoE...
Note that most of the above is centered on the AoE aspects of Mages... With 2 mages you can sheep a 2nd target and you certainly can do more direct damage to a single target so you may have better luck on slightly larger pulls with that (especially pulls with multiple sheepable Elites mixed in).
The above being said if your goal is to mainly PVE farm likely a 2nd Mage is your best bet as I don't really think adding a Priest or most other classes would be any better. Maybe something like a Prot Paladin would be a boon as the Prot pally could group up a ton of mobs and be doing some AoE damage and self-healing while the Mage then rains down high AoE damage as well... But then again a Mage can just kite a huge pack anyway so it may not necessarily be a lot more mobs killed per hour...
