Many of us do 5man teams so that we can complete our own dungeons but when a friend or two or 3 are on we just drop the appropriate number of characters. Some of the reasons we run instances is for drops for gearing and generally for gold.

Personally if I was doing my own 3 man team I would likely do a Tank + Healer + DPS/Hybrid which when decently geared at 60 opens up some farming that doesn't require a full 5man team (like DM jump runs). From Skarm's video on DM jump runs he indicated Warrior Tank was better than Druid Tank as at least one of the fights really needs some interrupts which are hard to pull off on a Druid. He didn't mention a Paladin Tank so I am not sure if they would have frequent enough interrupts (with talented HoJ). If you are only doing Dungeons I personally I like Paladin Tanks and they can farm solo mobs in some areas as well so if they are fine for DM jump runs you may want a Paldin Tank... If you plan to try to join Raids and tank then you pretty much have to go Warrior... Either Mage or Warlock could be fine for the 3rd slot depending on which utility you like more (food/water/portals vs healthstone/rezstone/summons). If you go Paladin Tank with Priest I would likely go mage for the free Water. If you go Warrior+Priest+Warlock only 1 character needs water as the Warlock can lifetap for mana.

Edit: Now that IWT is confirmed melee heavy groups with Warriors are all the rage (pun intended). I don't have much experience with them but I going to try a Warrior heavy party myself (3 Warriors+2 Paladins). With that in mind one other combo you may want to consider is 2 Warriors+Priest as the DPS would be rage based and thus not constrained by mana. Especially when Fury spec'ed they gen rage while fighting so it can be more of an energizer bunny scenario... Paladins with Wisdom blessing & seal likely can keep up with them and not have to drink much though I am not sure if a Priest can hit the same mana efficiency.
