Unless you have an overriding reason I would not do dual-Warrior and would stick to one of the team compositions with just 1 Warrior Tanking and the rest of the party having ranged options. I realize you can run the shaman in melee which may be OK if you want but if you run into issues at least you can covert them to ranged and still leverage them. Having at least 1 Mage and 1 Shaman can bring a lot of utility.
The following would be my order of recommendation:
Warrior, Priest, Shaman, Mage, Warlock (gives you the most options at cap, lots utility, & potentially 2 healers);
Warrior, Shaman, Shaman, Mage, Warlock (can still do 2 healers);
warrior, druid, shaman, mage, warlock (can still do 2 healers or at least an off-healer)
It seems like Mages and Warlocks are the classes that folk typically use/recommend for ranged DPS... I am not sure if it because Shaman and Druids are less mana efficient but you could also consider:
Warrior, Shaman, Warlock, Warlock, Mage
Warrior, Shaman, Warlock, Mage, Mage
