That sounds like a decent setup, provided indeed as you've stated yourself, the market supports it on your realm. Also make sure the level 3 barns have a level 100 follower working there with the skinner trait, you can go pick one up easily over here - this will increase the yield of fur and leather as well as savage bloods (the latter is a 6.1 change).

When it comes to enchanting, keep in mind that an enchanter gets a higher yield than a non-enchanter does when disenchanting items. Though with that said, I personally tend to disenchant any blues on non-enchanters that aren't weapons as the dusts tend to be worth more than the vendor price of the items. For weapons it's usually a toss-up, although enchanting scrolls can go for more gold than the materials to make them actually cost, in which case it's still a good idea to disenchant them.

Last but not least: it's also worth taking into account how much effort you're willing to put into it and how much enjoyment you might get out of the various methods of acquiring trade goods. Personally I find dusts, leather, fur and savage blood easy to obtain, it's not a lot of work. It's something I prefer over running multiple herb gardens every day, so personally I wouldn't want to have to keep an array of scribe's quarters going 24/7. Not because it's not profitable, but because I'd burn out on it (faster). It's good to keep the f-word in mind: fun.
