    The idea behind selecting profession buildings that you don't have on your character, is that you can still craft a subset of what that profession offers. So while you can't send your cloth to your tailor for example, you can still use it to craft tailoring items at that profession building itself. I suggest reading this Guide to Small Garrison Buildings from Wowhead and particularly paying attention to the "Crafting without..." sections to see what you're able to do with them if you don't have the profession itself.

    As for making money, I can't quite complain with five level 3 barns that allow me to trap animals in Nagrand and convert them into leather, fur and savage bloods, which then in turn get used to craft items (bags and epic upgrade tokens) to sell at the auction house. A while ago a change was implemented to make the trapping easier. What this means is, any party member with a level 3 barn that's within range of an animal being trapped, will get a caged animal. So for a multiboxing team of five, trapping a single animal means you get five instead (one per character). Respawn rates have also increased, so spending an hour in Nagrand means stocking up for five characters for 10-14 days (work orders take 4 hours to process, so catching 6 animals means you'll have a day of work orders). I use the savage bloods for leatherworking, tailoring or blacksmithing upgrade tokens, whichever has a decent price at the AH at the time.

    I'm also happily enjoying my enchanters and having alts disenchant their BoP blues at small profession buildings, which yields quite an amount of dust. I use those to make enchanting scrolls and sell those at the auction house as well.

    Would this work with my 8-box team (raid), or is 1 group max?

    I personally haven't tried this with groups larger than five members, though I do have my doubts it would work in raid groups as the entry in the January 9 patch notes specifically refers to party members rather than raid or group members: "Barn: Trapping now awards a caged beast for each nearby party member with an appropriate level barn."

    Worst case scenario: you could do this in two groups of five, so two members of the first group would also get cages from when they join the second group. If you keep track of your stock and alternate your group composition accordingly, that can still mean a little less work than doing it in two groups of four - although the latter requires less paperwork, of course.

    To my knowledge, double-trapping is no longer possible since the aforementioned hotfix, so splitting your team up in two parties where each places a trap underneath the same animal wouldn't work either.
