This, along w/ the "mob just stands there" when attacked, resulting in a "You're too far away to loot the corpse" message... is HIGHLY annoying.
I can't speak for your other issues, but I know for a fact on this one if that happens, just run back to where the mob shows up to you as. That way, when it dies your client and the server agree on the location, allowing you to loot it. I've done this several times with success every time. It's a pain to have to do, but it's at least a work around in case an important mob does this to you.
