Congrats, you'll find plenty of info here to help you out. As far as a third account goes, its totally up to you. I have always thought of 3 as almost perfect because you have alot of firepower but not too much and not too many charcters where you have to do alot of managing and if youre interested in pve you can run 3 dps, or 1 tank, heal, 1 dps etc so the choice yours.

I would personally start up as many as you'll want to play.
    And RAF them all together.

There are variations on the RAF chains you can do, depending on how many you have and what you had before.

If your goal is to 5-box, its easiest to do all five at once.
With an 'A' as the booster and boosting 'B', 'C', 'D', and 'E' accounts.
Even if all five are brand new, you'd level five together initially... and then use the toon on 'A' to boost the others.
    A > B > C -and- A > D > E
That maximizes granted levels to 'A', so you get a bunch of toons there despite using that account to boost with and not boosting toons on 'A'.

If your goal is three accounts...
Obviously, you wouldn't use five accounts.

    One consideration for the boosting...
You can only have five toons in a group.
So including the booster, the best you'll have is four toons being boosted.

Three is a good number, in that you can cover the Warcraft trinity... Tank + Heals + DPS.
You can also play 3x DPS, and do dungeon finder with someone else playing the Tank and Heals.
With three toons, they cannot automatically boot you from the group... and shouldn't provided you DPS well.

During your RAF, do as many combinations as you can stand.
It's a lot faster now than it will be later.
In particular classes that can spec multiple ways... with TANK and HEALS being strong considerations, are beneficial to have.
Quite a few people have had fun with Shaman characters, Druids, Paladins, Death Knights or Hunters.
I haven't seen many stacking Rogues or Warriors, but not saying they cannot work.

Mixing melee and ranged can be a little problematic, in that you have more things to worry about.
A single Tank, with Heals + Ranged is easy... park the others, run the tank in.
All melee is easy too... IWT/CTM everyone in, have the tank turn the mob away from the others.
Not saying to not mix things, but when you are Tank + Heals + Melee that needs to avoid Point-Blank AoEs and wants the rear-arc for reduced Dodge/Parries... plus you need to watch the ranged for Spell-Reflect, Adds, whatever mechanic the dungeon has to challenge casters.... its more things to pay attention to.

I personally had a lot of fun with Feral Druids.
Boomkin Druids can now heal (with glyphs) in their Moonkin Form.
Druids can (eventually) flight-form, which makes most of the outdoor collection quests tolerable, when those are intolerable for almost every other composition.
Druids can be Tanks, Heals, and both Melee and Ranged DPS.
Stacking 5x Heals, was overpowering in large-scale PvP type stuff, and will be again in world pvp.

Death Knights had a very simple priority rotation, in the last couple of expansions (but a more complex rotation in this expansion).
DKs can be Tanks and DPS.

Shaman, both as Enhance and Elemental are fun and more than decent boxed.
And Resto is a superb healer.
Adding one shaman to any team (Enhance adds to melee and Elemental adds to caster groups), can help a lot as Totems are potent.

Paladins are great tanks to box.
They make for very good single target healers, maybe the best.
You can DPS with them, too.

Everyone is going to have a favorite.
I'd recommend starting with Druids or Shaman characters, and then doing the other.
And probably doing at least two other sets, if you can stand the leveling grind.
Even if you park them at (whatever the RAF cap is) and don't level them past that... they're an option for down the road.
You never know which class is going to catch your eye.
Or if something will be added to a class, that you want to try, or conversely something is removed from a previous favorite or maybe the DPS is not there... and you want to switch things up.
    More options is always good.

Plus you can do tradeskill armies.
In the past, boxers have greatly benefited from having multiple toons, each with tradeskills.
Stacking Alchemy, has allowed for a lot of daily transmutes; I made 200K per week in the first few months of WotLK and Cataclysm... from transmutes.
Even if you just want to Prospect Ore, its going to be faster with five toons and mouse broadcasting than with one toon.
    EverQuest I: Bard / Enchanter / Druid / Wizard / 2x Magician.
    Diablo III: 4x Crusader & 4x Wizard.
