I've found ranged to be harder in general due to having to face your target, stop to cast, etc. If you really want to do this, I'd go with melee.
You won't gain much of the advantages of multiboxing in PVP, namely synchronizing burst and spells, with only two. You're probably already aware of 2v2 and how it works - by 1200 MMR, which is a terribly low rating, people already know how to PVP - they use (some of) their abilities, burst, cc, and work with their partner to some extent. They are even fully geared a lot of the time. They aren't great players, and yeah they can be pretty sloppy - freezing up instead of reacting to unexpected changes in strategy, using the wrong spell, overwriting or breaking cc, etc. - but they know how to PVP.
I may be wrong but I feel like trying to dual box 2v2 would be about as effective as running 1v2 with a good class - rogue, mage, or feral. You'll hover around 1100-1500 MMR forever. There are a few streams of gladiator mages who do 1v2 and they don't go much higher than 1500 or so despite their godlike reflexes and epic playing... a couple of 1400 mmr retards can eventually kill them.
I think there is a lot more potential in 3v3 to be honest, and some have had success in that bracket playing all three.
