Normal instances and battlegrounds will work with either healer.

The priest has more mobility when healing.
And brings Fortitude + Shadow resistance buffs to the table.
They will have better AoE healing.

The shaman has more buffs for the team, in the form of totems.
Healing Stream can be glyphed for Fire/Frost/Nature resist, although you'd have Nature from a Hunter already.
Earth Shield would likely make your tanking pet a far superior tank in instances.
Bloodlust/Heroism could help on some bosses.
I like the new Tremor Totem, as a raid-wide trinket vs Fear/Charm/Sleep.

    Either toon could rez.
The Shaman could self rez occasionally, if she's far enough back.
Either will work for what you want.
    EverQuest I: Bard / Enchanter / Druid / Wizard / 2x Magician.
    Diablo III: 4x Crusader & 4x Wizard.

Dont worry about bloodlust, corehounds bring that to the table. As far as all the shaman buffs from totems, exotic pets can bring those buffs, same with the priest. Shale spiders can buff fortitude. Ive lvled 5 BM hunters through 0 to 85, and would personaly use a disc priest. More mobil healing, you can put renew up on the pet tank, along with the shield. With a disc priest you can "Get ready" before a pull. Shamans can throw up earthliving and earthshield, but cant really heal the way a priest can. Shield the whole group, renew em all, mend pet with your hunter and pewpew! Thats just my 2 cents Gl

Its actually easier to manage a pet tank rather then a "real" tank. Turtles got a spell which gives 50 % reduced dmg! Im leveling a priest right now, aiming for 1 disc priest + 4 BM hunters

Before cataclysm I managed to complete both Gundrak and Utgardt keep in heroic mode with my 4 hunters + healer. But now with cata I have big problems already on the normal dungeons with this setup...
