And using a few earth elemental against dungeon bosses isn't an option at all when playing current content or?

The Earth elementals get 1 shot by bosses quite often. So it can buy you maybe 5 - 10 seconds, but not much more - at least for most bosses. They can't reliably tank at all. Maybe you'll find a few bosses that you can do with earth elementals and spam heals, bosses that are a bit gimmicky.
