I recently had my accounts restored after a hack. They see everything that happened the day of the hack - all currency that was exchanged, all items. You will receive everything in the mail. In addition, all of the goods the hackers bought with your currency (emblems, honor/arena points) and didn't mail away quick enough, will remain. I pretty much doubled my assets as a result of being hacked.
Overall, I'm kinda glad I was hacked. The only hassle at all was calling billing, but I just put my phone on speaker and watched TV until they answered (took over an hour). A few days later my mailbox is full of gold, items, and emblems and all my arena and honor points were restored. I got to keep stacks and stacks of gems and primordial saronites.
But, I wasn't active in the game during all of this, so I'm a bit biased. Not being able to play for several days (or having to play with half your gear missing) may have sucked.

All you really can do is just lay and wait on them, When I was hacked It felt like it took forever, but it also seems recent times as the OP's have stated they are a lot of accounts being compromised now.
So my advice would be to keep those tickets flowing until your completely satisfied with your restore/s. granted as the OP's has also stated you will not get everything back but you will get a good majority of it back.
sorry to hear that is has happened to you though, GL in getting all of your toons back to their original state.

Well as another update, they redid the restore on the account that they said could not be restored and said they had a problem with their logs, my warlock is pretty much back to the way he was but my shaman and hunter are still missing frost badges and about 30% of their gear. They also gave these toons a discretanary 800g which for two of the toons they had over 3k on each one. Resubmitted another ticket *sigh* , as I get closer on these accounts it is getting a little easier to remember what is mising although I am sure I will miss stuff many months down the road.
I still have 2 other account which remain virtually unrestored, even though when I spoke with the GM yesterday he said he had added the details of which toons to look at into the ticket

Well I just got done with an ingame game, she was the first person who really helped. She got everything restored with the exception of 3 sets of BoA shoulders and chestpieces and about 150 frost emblems across 3 toons. Otherwise the rest has been pretty much restored.
As a last note, she said there is currently 2 - 3000 accounts hacked daily just in US and Australia.
Back to farm badges to replace the BoA gear :-(
