You can just duplicate the actual World of Warcraft.app but I beleieve you want the separate folders for superior add-on/ keybindings/macros/etc performance. Don't quote me on that though. (Either way it's as simple as Cmnd+D)
Vasyl is right, you can just make a copy the .app file and run the two (or more), but to save any state and have separate addons you need a copied folder.
Its been awhile since I have been boxing on Mac side (yeah even though I wrote my own keybroadcaster/launcher software) but my setup was utilizing Symlinks (forget what they are actually called on Mac).
I have a 30gig SSD with 6 folders. I have a WOW Main folder that is the full build of wow. The others Symlink most of the folders. So I can fit 6 seporate instances of WOW on 1 30gig SSD.
One day I will get around converting the SSD over to the PC side of things, but with ISBoxer doing such a fabulous job I haven't had the need for it yet.
Im not at my computer right now to give full details on which folders to Symlink, but there is a thread on here somewhere about it, for the pc, but the folders to link are the same.
You can find info on Symbolic links and tools the make it easy for you on google.
I think I am using Make Symlink 1.1.6

for symlinking: open your terminal and use "ln"
ln -s source target iirc
The imo best way to do it is the hybrid approach, each hybrid copy takes up about 30mb.

That's a great article, especially the script near the end.
Though I am very comfortable in a command line environment I still wanted a tool that would automate creating the link.
Great bit advice on patching, that I totally forgot about. That being not patching the symlinked folders, but only the main, then just copy the .app file to copy folders.
Anyway I hope this helps the original poster.
Could you post your hardware spec you will be using, not cause I going to be hattin you, but just cause I am curious your performance vs pc. Haven't had the desire to try out some newer macs since I went full force pc a while ago
I have Mac Pro 8 core, 8 gigs ram, nvidia 8800.
I will say though, I notice way better performance on the PC. I am using bootcamp with WIn7 64bit
I also have an Alienware Quad (pre I7) with 4 gigs and nvidia 8800 that seemed to out perform the Mac Pro, but I recently added a second video card to my mac (lower grade nvidia) so I could have 3 monitors running. Makes working easier.
And gave my daughter the Alienware.
I have run 6 accounts on the Mac Pro, all on one monitor though (30 inch), not that breaking the screens up between 2 monitors would matter much. The 6 ran pretty smoothly. I want to try 10 boxing though I don't think I am that good with 5 so I cant imagine 10.
