I just did tank+healer for 50 levels and I loved it. I think its actually less work than heal+dps because you can coordinate cooldowns. If I was just healing and the mage takes damage, I might have to stop and give him a real heal, but as a boxer I know I'm about to taunt so I can just toss out the hot.
Movement while levelling is also not a huge deal... and actually having your source of heal aggro on follow and sitting in the consecrate all the time is nice (easy enough to back the healer out using arrow keys for bosses or trash that cleaves). Having innervate as a pally tank before divine plea saves downtime questing (plus innervate glyph of course!) and saves your ass in instances.
Also you'd be surprised at how little attention people pay... in dozens of instances no one has ever mentioned that I was boxing and the few people I've mentioned it to were surprised. I've tried to be sensible about which instances I do, and if I don't really remember it I'll do it on one toon first to make sure its something that doesn't have a mechanism thats going to mess me up. My tank macros mark skull and X respectively, and at the beginning of the instance I ask people to dps skull to help me out and stand in the consecrate if they get nervous. (this of course sets up that thats exactly where my healer is going to be for 80% of the instance)
Other places the coordination comes in handy... "that one idiot hunter" doesn't really mess me up, if he wants to offtank with his pet, I ask him not to, but his pet isn't going to get healed regardless so it's easy enough to wait for it to die and then taunt off a person.
