From my experience, I would say a 4xlock/1x priest is the easiest for leveling. I am 5 boxing shamans at the moment. While it isn't hard to level shamans, the locks have a lot of things going for them

I'd say questing is easy on both groups, while instancing will be easier with the locks/priest.
