I started out with 5, but have since cut back to 3. this was not due to financial reasons, but I found myself running with friends quite a lot and always having to drop 1-2 characters. As Jinkobi has mentioned above a group of 3 is a serious force to be reckoned with, and you can always scale up to 5 later on.
At the end of the day It's you who are playing the game, so pick characters you feel comfortable running with. Don't just follow blindly the lead of countless others, when they say you have to run with X of this and X of this to succeed. half the fun of Multiboxing is the sense of achievement on making your toons progress.
your best bet would be to pick characters to level that you are going to use towards "end-game" I wasted soo much time levelling up sets of 5 characters up to 70 (after the initial RAF levelling frenzy) and then dumping them afterwards, once I had planned what i wanted to get out of the game.
However if you do want some team composition advice, the team I spend most time triple boxing with has to be my Druids. The scope for them is fantastic (Tank, Heals and DPS) the instant forms are also a godsend - (think running off the top of Aldor rise in Shattrath and then hitting flight form just before you hit the bottom :P )
they don't work well for Arena, due to the lack of burst damage, but in PVP they rock (force of Nature + Starfall + Hurricane on all your toons in short order decimate the opposition). Stealth Attacks on mass are also quite a laugh..
In my signature are all the teams i'm currently running, I sometimes change around the order of who runs with who, just to add some variety to the time i spend playing (the joys of having tanks on different accounts).
