I'm currrently doing 3x Shams in Outland. I'm skipping the majority of collection quests unless I know that they lead to some awesome reward, but once I'm reasonably geared through quests I won't care until Northrend. With the massively reduced xp required per level it's going fast. If you get bored of questing simply queue for an AV, or hit the random dungeon finder. I actually did about 80% of level 60 just in AV and Ramparts.
