Set up two /click macros. First one is /assist with vehicle buttons 1/2, and the second that hits 4 (shield). The exact macros are in a thread around here somewhere, if you search. I'd post them but the server's down so I can't login.
I start in the middle, right next to where the champions stop but with enough room to throw before they're in melee range. Reasons I prefer the middle are; 1 - they don't have room to charge when you pull them; 2 - you have more time to trample after you've dismounted one.
It's really as simple spamming those two macros and hitting /follow or manually turning occasionally to face your characters in the right direction. The trick to it is to have a decent unitframes set up so you can clearly see your party pet health bars. When one of your horses gets to 50%, run it across to a fresh horse, switch and run back. The horses respawn, so it's better to switch early than leave it too long and risk losing a character.
Occasionally they will get one too many charges off when your shield hasn't refreshed quickly enough, but if you refresh mounts properly it's really not a difficult fight. If you're dying that quickly my guess would be that you haven't set up macros and you're trying to manually manage DPSing+Shielding, which is leading to you neglecting to refresh your shield every time it's up. If you take a couple of charges without 3 shields up, it will hurt.

I have 3 large LCD's and a pretty high-end PC that hot-switches clients to my main monitor very quickly, so switching to get a new horse is simpler for me. If you have trouble with lag while client switching, or tabbing, then the fight could be a bit more painful.
