How do I actually turn keymaps off? Thats the biggest problem im facing right now.... i can't write, because i have characters like "g" and "c" set as hotkeys for key-maps ("g" for example is a round-robin for my stomp ability, so i can only write a "g" every 5th click etc.)

If you used the Quick Setup Wizard there is an example of this in the Control key map, called "Activate Maps" (Shift+Alt+M by default). It's also described in Zanthor's "Zero to Hero" guide
