Interesting that you ask this now. I had a play with this over the weekend, FRAPsing on four machines, stitching them together in Vegas 8, and it works surprisingly well.
If I ever capture anything worth replaying, I'll post something. But for most encounters, previous posters are right - seeing the fight from various angles doesn't add much beyond a different angle of the back of the characters' heads
