I would team pure Melee with classes that can heal too - they don't necessarily have to be ranged or a dedicated healer though.
For example.
Warrior/ Enhancement Shaman. Both melee, but the shaman can buff the warriors damage with windfury totem, pop the odd heal on them both if need be, at later levels things wont last long against that combo.
Warrior/ret paladin again a nice buff from the pally, heals if need be and big damage output. BIg emergency heal for either the warrior or the paladin with lay on hands.
Rogue/Druid. Both stealthers, so can sneak past mobs to get to gathering items, the druid can be feral and pop the odd heal too.
Classes with limited self healing I might run as two of that class.
e.g Warlocks. Drain life, life tap and healthstones means very little down time on these guys. Wouldn't waste having a dedicated healer on them.
BM hunters might fall in to this category a bit too with spirit bond healing the hunter and pet.
Dk's might fall in to this category too.
That's just my opinion though... pick what you think might be fun.
