Default is nice once I've gotten used to it. rActionBarStyler is really nice and even if it breaks, my UI will still work (it'll just be uglier). Which was the point in the first place. I don't want any add-ons that interfere with the default key mappings, so dominos isn't for me :-)

I am in the middle of converting away from Macaroon myself atm.

I went for Dominos, because it trys not to stray at all far from the existing interface (a K.I.S.S. approach, explicitly to be more robust and easier for the author to update).

It does allow to hide except for mouseover, as you are looking for, but also does all the scaling and moving around, hiding the griffins, keybinds, and bar swaps for possession/vehicles, which I don't think you wanted.

Still, the /click macros seem to be the same as for the standard interface (eg I will be using "/click ActionButton1" just as if it were the normal interface), so it certainly seems that he is re-using the standard built-in stuff wherever possible. So far, it does seem robust to me.
