As alcattle said, two of one class can be a good way to start and learn, because you can have matching actionbars and keybinds, so with two priests for example, if you cast smite on one, you know the other will cast smite too
Different classes is trickier, but can also be more rewarding, as if you reach the level cap and then decide multiboxing is not for you, you've got two different chars at 80 instead of the rather pointless case of having two of the same class. (As happened to me, I got two warlocks to seventy then went back to single-boxing and the second warlock is just a waste of space now)
If it's a toss up between Paladin and Warrior, here's the major factors to think about:
Warrior: He never has to stop for mana unlike a Pally (and health shouldn't be an issue with your priest present)
Paladin: Potentially fewer deaths with the pally as both chars can heal, Pally can (arguably) has better tools for keeping the priest alive, and in the event of a really bad pull, divine intervention prevents durability damage and a corpse run.
