I think a lot of folks use Affliction for their locks, but I chose Destruction. For me, it was easier to macro. I can't log in to paste mine here but my lock is basically a Shadow Bolt machine with Chaos Bolt thrown in when CD is up. I can Immolate, Conflag and those other fun fire talents on boss fights using a separate key. The main trouble with Destro is that +hit can retard you if you raid or even in heroics.
What I did for my priest was spec discipline and dps with him. Until you hit heroics you won't really need a holy specced priest and then after you get him some gear you will feel compelled to spec him back. I specced shadow for a while but I had trouble getting him out of the cellar on dps. I use a separate key for healing. It lets me drop shields (I am specced shield heavy) and Pain Suppression and light heals. I can Greater Heal with another button or I used to have a modifier in my main heal button for it (Shift+J for Greater Heal).
There are some good posts here about a druid macro that using concurrent /castsequence macros. With it you can use Insect Swarm and some other talents.
There are loads of macros for tanks here and a butt load of shaman macros.
3 of your 5 are viable healing options even not specced as healers. I would make an emergency heal button for all of them, in case your priest dies or goes oom.

This is what I just switched to after 70 with much success. Curse of the Elements is your friend also, but I have it set on my 'pull' key.
Edit 2: As for targeting, I used to use /cast [target=focustarget] exclusively and I still feel like I have the most control with a focus targeting system (as in I lose my target less on my alts) but I switched to what is listed above because I can 5 man, 10 man and solo with each toon this way. For wanding or any channeling spell (like Mind Flay) /assist party1 or /target [target=party1target] is a good idea because those spells can be funky if the casting toon doesn't have a target selected.
