Just got my team of Warrior, Paladin, Druid to 60.
What would be the quickest and best way to level to 80, considering I have a 80 main on another account I could boost with.

Questing is the fastest.
For most Multi-Boxers, this addon (below) is of ZERO use until level 60 because of the RAF bonus. By the time you have "followed" 1/2 the guide, all of the quests that you still need to turn in are grey (trust me, I tried it). But AFTER 60, or after the RAF expires... the WoW-Pro addon is amazingly fast.
Get the WoW-Pro Quest Addon (built to work with TourGuide). Make sure that you get all of the associated addons (there are 3)... and make sure that you turn QuestHelper OFF (garbage-ass addon anyway).
I didn't do "everything" that they recommend in this guide (they say to stay in Outland until 70... I went to Howling Fjord as soon as I dinged 68...). To give an example of how "complete" these guides are... I averaged < 9 hours /played per level from 70-80, I got the achievements for Howling Fjord (I Toured the Fjord), Borean Tundra (Nothin' Boring about Borean), Dragonblight (The Might of Dragonblight), and Grizzly Hills (For Shizzle my Grizzle)... and it took me TWO quests in Zul Drak (sp?) to ding 80.
I did run a few instances in-between (i.e. going through normal UK, normal Nexus, normal Azerjol) to get those quest-turnins... but other than that... ZERO instance-boosting. Fastest way to 80 = follow these guides.
(Note: Using this guide through outland, I only did Hellfire / Zangramarsh / Terrokar / Nagrand... never even SAW the other zones until I was an 80... doing the summer festival).
I'll have to look into that JU1CYFRU1T, I've just been questing from memory and I'm currently 69 (should hit 70 today).
Does it have the ability to auto disable every collection type quests that aren't a drop for all? (I hate collecting 75 of one thing to get 10k xp)

So instance boosting is a no-no in Outland?
I went from 66-68 in Mana Tomb runs with 4 shamans and 1 mage... so I didn't use a 80 but I instance grinded because I ran out of non-collecting quests.

No, there is no "auto-disable"... but every quest line is a simple check-box. It will say "collect 15 horse balls", and you just check the box and the guide will move on. I am not 100% sure about how this would work out in certain chains... but as a rough guide it is MUCH better than just roaming around.
There is nothing worse than getting a quest at the southern tip of Borean... running all the way to the northern tip, and then remembering that there were three other quests where you just were.
*EDIT*: I have NOT used this quest-guide while mult-boxing... this is how I got my MAIN to 80... should have been more clear. I will still be using this with my two new alts (currently 45 and headed into Strat tonight).
I currently use Quest Helper just to get a better grasp on planning my questing, but I only use it on 1 char. Jamba takes care of the multiboxing part.
