I have a grab bag too, it works out pretty well:

I have 3 guys leveling blacksmithing, JC, and gathering.
I have some lower level guys at 300 in alchemy and engineering, they'll level when I level them more.
I don't do it for gold, as much as I like to outfit my teams myself, to fill in gaps until I can get dropped and badge gear. I do sell some items, like Frost Lotus and Arctic Fur, and inks. At the very least you should have all 3 gathering professions on your team, otherwise you're leaving gold on the ground (or on the body with leather). It kills me that my current team has no skinner, but I just have no interest in stopping now and leveling it from 0.
There is a lot of synergy between them, too - the tailor and leatherworker can make items to DE into specific dusts and essences I need, and all of the gatherers fill the bank for others. The JCer makes rings and gems for everyone else, and the enchanters DE the green drops. I'm frequently gold poor, but my guild bank is rich in stockpiled mats!
Don't forget fishing and cooking, either - fishing dailies are a good, easy way for gold and rep in Outlands and Dalaran, and cooking at 450 lets you make some very good buff food - and the raw materials sell VERY well, the fish my rogue gets from doing the fishing dailies brings in a nice constant income, from selling the fish that raiders need for their buff food. Plus, the fishing dailies can have nice cash rewards too, and the occasional epic gem in the bag of fishing treasures.
I have 3 DKs cooling their heals in Shattrath right now, I'm thinking of making them a farm team, and cover all of the gathering trades, and fill in some of the other professions I don't have. One of them will have to be tailoring, just for the extra cloth drops in Northrend.
