Like most have posted already, I don't use a bar addon. I run with as few addons as makes sense, mostly because I don't want to have to rely on fixes to addons after patches to keep playing. If all my addons broke today when I got home, then hardly anything would be different for me. I would definitely miss Jamba and QuestHelper, but can survive without them (just slightly less conveniently).
Bar space can become an issue at times, more so with some classes over others (shaman, mage). I just use macros as efficiently as I can to reduce the number of buttons I actually need. Anything that I almost never use gets put on the secondary action bar, such as tradeskills and situational out-of-combat stuff like all the tracking abilities for a hunter or portals for the mage.
Duskwood - Alliance - PvE
Other than VanasKos and Cartographer I have quit using addons.

I use Bar4. I am not really the "stock" kinda guy. I have to mod everything. So even my UI has to be modded to my tastes.
I'm a bit surprised at the amount of people that use the default blizzard bars. I thought with the amount of macros most people use for multiboxing almost everyone would have a bar addon of some sort to provide more buttons.
I use macaroon personally, I think 80% of my buttons are a macro of some sort, I couldn't live without it.
Yeah that surprised me as well. The normal UI takes up a ton of room for me which I don't like. I don't care to shift to get to the next bar. What I like about the addons is I can set them to fade out so it doesn't clutter my view. When I mouse over them they are back.
Ditched the default buttons/bars/macros when Blizzard fucked around with storing them on the server last year and I lost everything multiple times!
Now it's Macaroon for every char, single or multiboxed, so I can backup my files and restore them when/where I want.
CTMod since I started with it and have gotten too used to it to give it up. Relatively simple and effective.
Default UI. TBH it works just fine and if it isn't broke don't fix it.
However that being said, while I'm not running out of bar space, I wouldn't mind having a few more bars.
As of right now I have bar one for, when said toon is leading, and bar 2 for when said toon is following the focus. And the rest full of all kinds of utility stuff. I've worked it pretty well so that I can do both pvp and heroic dungeons with my current set-up. But I wouldn't mind having additional bars to set-up specifically for boosting either 1 lvl 80 boosting 4 low lvls thru azeroth content or 4 lvl 80's boosting 1 lvl 72+ through WOTLK. And a few other things too.
Dominoes FTW, but I could live without it.
