I run a prot pally and holy priest and so far I've managed to two box SM:Lib, SM:GY, and RFD, at the appropriate level too. The damage mitigation being prot spec is insane, and the healing from a holy priest kicks butt too.

Out in the open world I've had a number of 15 vs 2 fights that I've come out of with 100% health on both toons, 100% mana on the pally (thank you blessing of sanctuary, spiritual attunement, and holy shield), and about 50% mana on the priest.

Thinking of trying Uldaman two-man soon...
i see.. seems priest/pally is a better combination than pally/mage... i took mage for the dps... and at times my pally run oom and not able to hold aggro..
