So say i was to box a paladin and a mage, would this be a very hard combination with only 2? Or is boxing 2 just as easy as boxing 5 or such?

Let's see:
DPS = Mage + some from Paladin
Healing = Paladin
Rez = Paladin
Tank = Paladin

Yup, should work fine. The Paladin might be pretty busy, but as long as you stay out of instances, you should do fine. Two char's are usually much easier to manage than three, which in turn is a bit easier than four of five (four and five are about equal). The main limitation of two is that you need to outgear and/or outlevel an instance to do it without help. The BIG advantage of dual boxing is that collection quests are usually very easy, compared to five.

You'll ease your tanking burden a bit if you spec the mage frost, as fire tends to draw agro easier. The advantages of your chosen team are: Rez. Healing, Tanking, decent DPS, nice intel buff for the paladin, and great buffs from the paladin, good crowd control (runners and ranged mobs can be a pain for solo paladins), and great world mobility (mage portals). I'd spec the paladin protection while leveling, to be able to reliably grab agro from the mage. Mages are VERY fragile, and usually rely on mobility and snares to survive when solo leveling. That mobility usually isn't possible when multi-boxing, but blowing stuff up is great fun!! :P
