I was thinking of making a 2v2 arena team consisting of a frost DK and a Ret Pally. I wanted to ask what kind of growing pains should I expect from making an all melee team, and of course, boxing them. Thanks for the information.

its extremely difficult to box and win in 2s since its fairly easy to seperate your two characters (especially since rogues and hunters are very popular in the 2s bracket) and once they are apart you will spend more time trying to get them back together than anything else.
still its fun to try! i heavily recommend playing only on mondays however, thats when the greatest number of "dont care" teams play and you'll have the best chances at winning.
With a double melee multi box in 2's you will most likely get steamrolled. If you are really serious about it try something like dk/resto druid or warrior/resto druid so that you can spam roots and cyclone.

What if I would make my pally holy, think that would work? I have a 71 druid but the thought of leveling another toon to 80 makes me cringe.
I would say, go with it and see what happens.
Generally speaking, two toons relies more upon independent action then coordination for success.
In 5's, playing 4 or 5 dps toons, you can quickly burst one target down before the other team can react.
That is playing towards the strength of boxing.
Still, win or lose, you'll be earning arena points on two toons.
You might have fun in arena, you might not. If you do, continue with it as far as you can.
You'll also learn what works and what does not, which will make future arena teams that much better.
