Has anyone tried taking a Deathknight to 59 and using the grant levels on a lower character? Because you could ( if it works ) level two DK's to 59/60 and grant levels. If this would work, I could just RAF a druid / pally / warrior on Turalyon.

This works, but only the levels the DK earns count for grant-a-level purpose. So, a DK leveled to 59 will have 2 levels to grant to the veteran linked account.

With respect to the tanking question, i personally have a 5-box shaman team at level 72, and am bringing up another team which includes a pally, DK, and druid at 63 at the moment.

I'm planning on running 3 shammies, 1 boomkin, and still undecided about the pally vs. DK for main tank. I'm inclined to the DK, which generate more DPS than a prot pally and are frankly a ton of fun to play. They also bring some good synergies of their own (esp. Ebon Plaugebringer; +12% magic damage). However, the pally is simpler from the perspective of using a mashable, AoE based tanking /castrandom macro. That's a pretty strong positive, since maxing out elemental shammy DPS in WoTLK looks like it's going to require a multi-button strategy to maximize effective use of LvB.
I'm EU server here.
I levelled my DK so quickly I didn't want to leave Ebon Hold Area,so I tohught i'd lost my Gift Lvls turns out I can gift them even at 61,.It was epecially usefull for topping up characters around the 58-59 mark, you only get 2 levels tho,(sneekingly hoped I might get more but nup
