You can multibox any class however the melee classes are a lil tougher to manage.
From what I have read the deathknight is an anti-caster tank/melee type class. I plan on at least dual-boxing if not tri-boxing a set of deathknights when WOTLK comes out.
I dual boxed a couple of DK's last weekend up to level 60. It takes a bit of coordination, but was about the same positioning wise as other melee I've tried. Since you need to track rune cooldowns, it will be much easier if they are the same spec, casting the same abilities.
I took it upon myself to attempt to write a guide to multiboxing death knights, but I have yet to finish it. I'm basically halfway with it (I played the area through once just to see it and understand it). I don't know if I'll keep going - they just don't interest me in a group - It would be more fun to box them with shadow priests or something like that. There are a few addons that put a HUGE runeblade with rune cooldown information just below the center of the screen and that's how I've been handling the different spec issue. It seems to work well enough.

I forsee one potential problem with multiboxing multiple deathknights, related to the rune cooldowns. If one character is incapacitated and does not perform an ability when the other(s) do, then the rune cooldowns won't match between characters. Obviously the issue corrects itself after combat, but for longer fights I reckon it could really screw things up.

Its not really that big. I've seen it already when a rune based ability got dodged or parried. If it happens on a slave, you won't notice it, you just lose a bit of expected damage. Actually, thinking about specs, you could have different specs since there are abilities that use the same runes that could be used at the same time. For example...
Unholy spec - Scourge Strike (1U+1F) with Blood spec - Death Strike (1U+1F)
Unholy spec - Blood Strike (1B) with Blood spec - Heart Strike (1B)
etc.....
Boxing DK's is perfectly doable, but is it smart? Or practical? Or effective? No.

I've been quad boxing Deathknight and so far it's going good in PvE, I have my doubts in PvP encounters though. Here my general strategy: I have my main DK and a swarm of others all /following the main. One of the DK's from the swarm pulls aggro with Death Grip, this gets the mob into melee range of the entire group of 4 DK's (Or as I call it, "The blender")
Death grip's cooldown is a little annoying, so I modified a Frost Nova macro I read about somewhere (Might have been wowwiki)
DK1's macro: /castsequence reset=75 Death Grip,,
DK2's macro: /castsequence reset=75 ,Death Grip,
DK3's macro: /castsequence reset=75 ,,Death Grip
What this will do is have it so that each time (within a 75 second time frame) you press the macro, only 1 DK will cast DeathGrip (Instead of all at once which would be a waste)
