I've found that having my druid be the healer works extremely well. The new AoE heal hits the entire dps team, so it works wonderful vs aoe style attacks on the back group. Rolling HoTs on the tank does a great job healing, and you can cast Regrowth or Healing Touch for a monster sized heal. And at 80 we'll have Flourish as well.
Also, there's nothing like being able to roll a second HoT on the healer himself for boss fights where people get sacrificed and can't do anything. In that case the tank continues to get healed for up to 12 seconds, and the healer for 8 - which works unbelievably well for preventing problems in those situations. I'm assuming that a group with a resto shaman (and only a balance druid who could heal otherwise) that gets sacrificed would require the balance druid to stop blasting and start healing the resto shaman...
