Well that is the thread I would have pointed you to to be honest. It has some great information, but it's hard to find amongst all the trash.

I'd say a couple of things:

1) It is a actually a great time to level professions atm, with the exception of alchemy/inscription. People are dumping their mats on the AH at rock bottom prices, so the overall cost of levelling I'd estimate to be around 30% lower than usual.
2) You can't go too far wrong with Leatherworking. It'll give you a nice head start whilst gearing up in Wrath, although eventually (as in TBC) I'm sure the gear will become outdated, but it's a nice start.
3) Other options are pretty varied i guess, as per that thread, enchanting is a solid and consistent boost, alchemy is great if you can be bothered to craft the right pots and use them etc etc
4) I suspect there will be a distinct advantage in actually having the same profs on all your chars in Wrath, as some recipies will only be only available through tradeskill specific dailies (I have many profs on mine, and I fear having to do many different dailies to get the recipies I want).
