Just pick a Prot. Paladin + Heal Bot (preferably Priest or Druid. In my case I am loving druid's instant heals and heals over time. I am AOE leveling/grinding and I never drink!) + DPS classes of your preference.
The Paladin is the only one not optional, IMO. At least before WOTLK, then Warrior will get a boost in AOE tanking.

Definitely do something you think will be fun. I say get some more copies of wow and use the raf benefits to level up a few more teams with a good mix of classes so you can pick and choose!
