Can't decide

Want to start a second group other than my 5 Shaman, mainly to gather rest xp and level primarily that way.

Paladin.......but not sure if DK will make a better 5 boxing tank than Pal.
Priest......can't really see a drawback to this one.
3 Warlocks.....love Warlocks, but can't decide if I should do 3 mages or 2 locks, 1 mage especially with wotlk changes coming.

Also, w/ DKs starting at 55, I don't want to start at level 1 be level 30ish then hear the announcement all alts can start at 55.
