When I first rolled on WoW, I played alliance on Alleria (PVE server). My friend and I decided to reroll on Mug'Thol Horde, which is PVP. I loved it.
Sure, when I was leveling, I probably wasted 8 hours doing corpse runs because of griefers... but the damage you can do, or the feeling of killing someone who is a couple levels higher than you when they try to gank you is great. There weren't many mass gankers except in STV (the ganking there SUCKED). I remember a level 40 something ganking my group of 5 when we were trying to run blackfathom deeps, and when we killed him ot was great.
Also, from a progression standpoint, I'd stay on a PVP server. While you might expect PVE servers to have... better PVE progression... that often is not the case. Having the option to do world PVP must appeal to high end raiders. If you ever plan on raiding (with one toon, many toons, doesn't matter) PVP is looking like its the way to go.
