On a side note, and this is coming from someone else only doing this a couple days - give some thought to starting with two of the same class. I picked two shamans. A guild mate recommended this to me because it will help get you used to the dynamics of playing two characters at the same time while only concentrating on one spread of abilities.
Two Shamans would be a lot of fun I think. I tried several combos up to the mid 20's before settling on the War/Pal, and the Shamans were a close runner up.

I did do a lot of melee, using Seal/Judgement of Righteousness for some extra DPS. But in all honesty, the damage output on the Paladin was not very good. I spent all my gold gearing up the Warrior, making sure he always had up to date weapons, so the Paladin had to "live off the land" and take quest items. I focused on +int and +healing, so he was pretty gimp on damage. In later levels, the Paladin just tagged along as a heal bot; With talented Blessing of Wisdom, you can chain heal your Warrior, fully heal up towards the end of a fight, and move right on to the next pull without any down time for drinking, and the Paladin will still be near full mana most of the time.

Blizzard is makings some sweeping changes to the Paladin with WotLK. It may wind up being relatively efficient to sit back and zap enemies with Holy Shock (lowered mana cost) and 30m Judgements (holy talent).

Initially, I did the 5-mans when you first get the quests (probably just for RFC and Wailing Caverns), without much trouble. After that, I started waiting a couple of levels and did them when the quests were green/yellow. By the time I hit up the Scarlet Monastery Cathedral, fights were taking longer and I was waiting until the most of the quests were green. I think there were only two end bosses that I had to find a group for: Uldaman and Gnomeregan. The Maraudon Princess was pretty brutal, but doable.

Dual-boxing the 5 mans is not best way to go if you're looking to level quickly, but it's fun. And you get all the loot.

I should also mention the advantage of Crusader Aura for outdoor questing. Free mounts for the Paladin are also nice, if you don't already have a high level character to funnel gold.
