Load up some trial accounts and see. I'd guess 3-4 smoothly and 5 with a little lag.

I'd be suprised if you couldn't run 5 OK.

My specs are lower then that; that is closer to my wife's machine, and we both 5box with no issues, you will be fine. But I iirc SLI and wow to not like each other. but make sure it is Vista 64bit because of the amount of RAM you have.
